The one thing I love the most is cooking…It’s a relaxing and joyful feeling when I cook.
I love to throw things together; in hoping that I will create a delicious meal. Boneless Chicken thighs are one of my most favorite meats to cook with.
Because this type of meat has extra fat, all of the flavors stick and make the meat extra tender. Yumm….
I call this recipe ‘Zesty’, because I have lost of fresh lime and fresh herbs!
Recipe:
8-10 Boneless Chicken Thighs
1 Hand full of fresh Cilantro
1 tablespoon of fresh ginger
2-4 small cloves of garlic
3 Limes (squeezed)
1/2 of white onion
*Salt, pepper, garlic powder to marinate.
In a separate bowl, clean the chicken thighs thoroughly. Cut-off all access fat. In the same bowl, season salt, pepper, and garlic powder on both sides of the chicken.
In a blender, blend cilantro, ginger, garlic, lime juice, and white onion. Pour green liquid over chicken and let marinate for 1-2 hours.
Grill pans work best for me, so I’ll sprinkle about a tablespoon of Olive Oil and heat pan to medium heat. Place chicken on top, and let cook 7-10 minutes or until chicken is brown. Make sure to cover when cooking (this will make the chicken very tender, I usually use foil).
Any extra green sauce from the bowl, make sure to pour little by little over the chicken to add more flavor while the chicken is cooking!
